Our cuisine revisits the classics of French gastronomy. Created by our chef Marie Pacotte, our recipes highlight essential recipes by giving them a modern touch! Duck, Francette's flagship product, is an integral part of our menu through signature dishes such as duck breast,
served with a delicious vanilla béarnaise sauce. In the evening, our space at river level is transformed into an ephemeral restaurant, where you can enjoy the cuisine of our chef through a 6-moment tasting menu.
Cheffe du restaurant flottant Francette depuis 2021, Marie Pacotte dirige une brigade de 25 personnes et participe à la saison 15 Top Chef diffusée sur M6. Sa cuisine, végétale et raffinée est synonyme d'élégance à la française.
Cheffe Exécutive et associée Fuga, Stéphanie signe toute l'offre restauration du groupe et accompagne nos Chef.f.e.s au quotidien. Formée dans les cuisines de restaurants étoilés, elle mise sur des produits de qualité, sur la minutie de son travail et sur son audace pour proposer des assiettes étonnantes dont on se souvient. Sa grande force, les sauces et bouillons !
Tania Cadeddu est Cheffe de notre restaurant Laïa, originaire de Sardaigne et ex-candidate de Top Chef, elle vous propose une cuisine solaire et conviviale à travers des assiettes colorées placées sous le signe de la Méditerranée. Sa signature ? La cuisson à la robata !
